Veg Thali :: DETAILS

Rinse 1 cup basmati rice and soak it for 15-20 minutes. Add oil in a deep pan or kadhai and put in cumin seeds. Put 1 chopped medium onion, 4 chopped medium tomatoes, 3 green chillies, 1 tbsp ginger garlic paste, ½ tbsp turmeric, garam masala & red chilli powder and fry on medium heat. Add salt, 5-6 cashews and 1½ cup water. Put star anise, 1 stick cinnamon & 1 bay leaf in the water and add rinsed rice. Cook with the lid on for 5 minutes then remove the lid until rice cooks. Lastly, add 2 tbsp chopped coriander leaves.
